Agar-Agar Gula Melaka (Palm Sugar Agar-Agar Jelly)

Ingredients

  • 200 g coconut milk, fresh or packaged
  • 1 egg
  • 1 pinch salt
  • 200 g palm sugar, cut in chunks
  • 2 - 2 ½ tsp agar-agar powder
    or 10 g agar-agar strips, cut in 7 cm length, rinsed
  • 1000 g water
  • 50 g sugar, adjust to taste
  • 2 pandan leaves, tied in knots


Preparation

  1. Place a bowl on mixing bowl lid, weigh in coconut milk. Add egg and salt then mix. Set aside. Place palm sugar, agar agar powder, water, sugar and pandan leaves in mixing bowl, boil 10 min/120°C/speed 2.
  2. Cook 2 min 30 sec/120°C/speed 1. Meanwhile, add reserved coconut-egg mixture through hole of mixing bowl lid. Remove pandan leaves. Transfer to a baking tin (20 cm x 20 cm). Allow to cool completely and refrigerate for at least 4 hours. Cut in desired shapes before serving.

Hints & Tips

  • Replace baking tin with small cup moulds.
  • If your coconut milk is too thick, reduce to 50 g and dilute it with 150 g water before step 1.
