Tau Suan


Ingredients:
250g split green bean
3 pandan leaves
1 litre water (steaming)

150g sugar
1250g water (syrup)
6 pandan leaves, knotted

50g sweet potato flour
250g water (slurry)

Youtiao for serving

Method
1) Rinse and soak beans in tap water for 2 hours.
2) Rinse and drain thru Varoma dish. Make a hole in the middle of the pile of beans at the base of the Varoma dish. This is to allow steam to enter the dish.  Place pandan leaves over beans. Set varoma aside.
3) Place 1 litre of water in TM bowl. Set 8mins/Varoma/ Speed 1 to heat water.
4) Once water reaches Varoma temperature, stack Varoma dish on lid.  Steam 20mins/V/Sp 3.5.    Check beans. it should still be whole and will flatten when press with a little bit pressure, that means it should not entirely mushy.  If still  very hard, steam a bit longer.
Set cooked beans aside.
5)  Boil 1250g water with sugar and pandan leaves 15mins/V/ Sp 2.5.  Stop midway taste for sweetness and adjust accordingly, continue boiling to get a fragrant syrup.
6) Meantime, mix potato starch with 250g  water.
7)  At the last 3 mins of syrup boiling, pour in slurry thru MC hole and let syrup thickens.  Adjust thickness of syrup by adding a bit of water or more slurry.
8) When done, add in the cooked beans and use a pair of chopsticks to stir thru. (No need to reboil). Cover with lid and let rest for 5 mins before serving.
