Soya Milk Ice Cream
Ingredients
- 300 g soya milk
 - 300 g whipping cream
 - 140 g sugar
 - 4 egg yolks, from medium eggs
 - roasted soybean flour, to taste (see tip) (optional)
 
Preparation
- Place soya milk, cream, sugar and egg yolks in mixing bowl then cook 8 min/90°C/speed 2. Pour into an ice cube tray and leave to cool slightly. Once cooled, cover with cling film and freeze for at least 10 hours.
 - Place half the soya milk ice cubes in mixing bowl and crush 15 sec/speed 9. Scrape down sides of mixing bowl with spatula then, with aid of spatula, blend 30 sec/speed 6. Transfer to a serving bowl.
 - Place remaining soya milk ice cubes in mixing bowl and crush 15 sec/speed 9. Scrape down sides of mixing bowl with spatula then, with aid of spatula, blend 30 sec/speed 6. Transfer to bowl with reserved ice cream. Serve with roasted soybean flour (if using) to taste.
