Soya Milk Ice Cream

Soya Milk Ice Cream


Ingredients

  • 300 g soya milk
  • 300 g whipping cream
  • 140 g sugar
  • 4 egg yolks, from medium eggs
  • roasted soybean flour, to taste (see tip) (optional)



Preparation

  1. Place soya milk, cream, sugar and egg yolks in mixing bowl then cook 8 min/90°C/speed 2. Pour into an ice cube tray and leave to cool slightly. Once cooled, cover with cling film and freeze for at least 10 hours.
  2. Place half the soya milk ice cubes in mixing bowl and crush 15 sec/speed 9. Scrape down sides of mixing bowl with spatula then, with aid of spatula, blend 30 sec/speed 6. Transfer to a serving bowl.
  3. Place remaining soya milk ice cubes in mixing bowl and crush 15 sec/speed 9. Scrape down sides of mixing bowl with spatula then, with aid of spatula, blend 30 sec/speed 6. Transfer to bowl with reserved ice cream. Serve with roasted soybean flour (if using) to taste.
